  • 3 Large Eggs
  • 1 Tablespoon Butter
  • 1 To 2 Tablespoons Creme Fraiche
  • Salt
  • Black Pepper
  • 1 To 2 Chives

Preparation

  • Dice Chives

Directions

  • Break eggs into a cold, saucepan.
  • Add 1 tablespoon butter.
  • Place the pan over medium high heat.
  • Whisk using a spatula, stir continuously while cooking.
  • Remove from heat every 30 seconds for 30 seconds, repeat until cooked.
  • When nearly cooked, remove from heat, add creme fraiche, salt, pepper, and chives.
  • Serve immediately.
