Cilantro Lime Rice

Ingredients

  • 2 Cups Basmati Rice
  • 2 1/4 Teaspoons Salt
  • 1 Bay Leaf
  • 1 Teaspoon Olive Oil
  • 2 Tablespoons Cilantro
  • 2 Tablespoons Lime Juice
  • 1 Tablespoon Lemon Juice

Preparation

  • Finely Chop Cilantro

Directions

  • Bring 8 cups water to boil in a large pot.
  • Add rice, 2 teaspoons salt, and bay leaf.
  • Stir and return to boil.
  • Boil uncovered for 12 minutes.
  • Remove bay leaf.
  • Using fine mesh strainer, drain rice and rinse with hot water.
  • Pour rice into large bowl.
  • Stir in cilantro, lime juice, lemon juice, and remaining 1/4 teaspoon salt.
  • Serve immediately.
