Directions

In a large bowl, add avocado and lime juice, toss to coat.
Drain and reserve lime juice.
Add salt, cumin, and cayenne and mash using potato masher.
Fold in onions, jalapenos, tomatoes, cilantro, and garlic.
Add 1 tablespoon of reserved lime juice.
Let sit at room temperature for 1 hour and serve.

Slow Cooker Chickpeas

Place 7 cups water, chickpeas, and baking soda in a 2 1/2 quart slow cooker.
Cover and cook on high for 4 hours, or low for 8 to 9 hours, or until tender.
Drain and serve/use immediately.

Hummus

Place chickpeas, garlic, and salt in a food processor.
Process for 15 to 20 seconds.
Scrape down sides of food processor and process for another 15 to 20 seconds.
Add lemon juice and water and process for 20 seconds.
Add tahini and process for 20 seconds.
Scrape down sides of food processor.
With food processor running, drizzle in olive oil.
Transfer to a bowl and sprinkle with sumac, if desired, and serve immediately.

Kahlua Chip Ice Cream

Ingredients

8 Large Egg Yolks
1 Cup Sugar
1 Quart Half And Half
1 Tablespoon Vanilla Extract
3/4 Cup Brewed Double Strength Espresso
1/2 Cup Kahlua
8oz Semisweet Chocolate

Preparation

Allow Espresso To Cool
Chop Chocolate

Directions

Place a large mixing bowl in the freezer.
In a separate large bowl, whisk together egg yolks and sugar.
In a saucepan bring half and half to a boil.
Gradually pour egg mixture into half and half.
whisk until sugar dissolves.
Let stand 5 minutes and then chill.
Stir vanilla, cold espresso, and Kahlua into chilled custard.
Pass through a fine strainer.
Pour into an ice cream maker and processes according to manufacturer’s instructions.
When ice cream is nearly done, melt chocolate over simmering water.
Transfer frozen ice cream into the chilled bowl from the freezer.
Pour in melted chocolate.
stir and mix vigorously with a wooden spoon.
Transfer to a container and freeze until firm.
Serve frozen.

Preparation

Chop Onion

Shred Mozzarella Cheese

Cook Lasagna Noodles, Al Dente

Directions

Preheat oven to 350^o F (175^o C).
In a large saucepan cook ground turkey, onion, and garlic in oil.
Add sauce and simmer for 15 minutes.
In a medium bowl, mix ricotta, 1 cup mozzarella, parmesan cheese and eggs.
In 9x13 inch baking dish, add 2 cups sauce.
Top with half of the noodles, then half of the remaining sauce.
Add ricotta cheese mixture, half of remaining mozzarella.
Place remaining noodles and sauce on top.
Cover with foil and bake for 45 minutes, or until hot.
Uncover, top with remaining mozzarella.
Bake 15 additional minutes.
Sprinkle with parmesan, let cook 15 minutes and serve.

Directions

Chili

Heat oil in a skillet and saute onions until translucent.
Add garlic and saute until it begins to turn brown.
Stir in jalapenos and cook until they begin to soften.
Add ground beef and cook until browned.
Drain off any fat.
Season with cumin, chili powder, salt, and pepper.
Add tomato paste, hot sauce, kidney beans, tomatoes, parsley, and cilantro.
Simmer for 30 minutes.

Rice

Bring consomme to a boil in a large saucepan.
Stir in rice and butter, return to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Remove from heat and let sit for 5 minutes.

Final Steps

Spoon rice onto serving dish and top with chili.
Serve immediately.

Directions

Spaetzle

Beat egg, egg yolks, and milk in a bowl and set aside.
Combine all dry ingredients in a bowl.
Add egg mixture and blend with hands.
Add melted butter.
Let rest for 30 minutes.
Bring a large pot of salted water to a boil.
Place a perforated hotel pan over the boiling water.
Pour the batter into the pan and press it through into the water.
Cook until spaetzle rises to the top.
Drain and shock in ice water.
Drain again and toss with oil.

Potato Cakes

Preheat oven to 400° F (205° C).
In a baking dish, toss whole potatoes with olive oil, salt, and pepper.
Roast until mostly cooked through.
Remove from oven and cool.
Peel potatoes and grate.
Season with salt and pepper to taste.
Melt butter in a saute pan over medium heat.
Saute onion until tender.
Add cooked onion to grated potato mixture.
Form 4 patties.
Place patties on a cookie sheet, cover with plastic, and chill in the refrigerator.
Heat about 1/4 cup olive oil in a large saute pan over medium high heat.
Add potato cakes and saute until golden brown on both sides and heated through, about 2 minutes per side.
Drain on paper towels.

Thermidor Sauce

Preheat oven to 500° F (260° C).
Place lobster heads on a sheet tray and roast until slightly browned, about 15 to 20 minutes.
Place 1/2 stick butter, onion, carrot, celery, shallots, and garlic in a large saucepan.
Add brandy and reduce until almost dry.
Add white wine and reduce.
Add tarragon, bay leaves, parsley, thyme, basil, chicken stock, tomato paste, and roasted lobster heads.
Bring to a boil and simmer for 2 hours, skimming periodically.
Strain through a chinois and return to pan.
Reduce by half until sauce starts to thicken, about 30 minutes.
In a small saucepan reduce heavy cream by half.
Whisk heavy cream into sauce and finish by slowly adding remaining half stick of butter, 1 tablespoon at a time.
Keep warm until ready to serve.

Lobster

Marinate fillets in 1/4 cup olive oil, black pepper, and thyme for 1 hour at room temperature.
Bring 2 cups of water to a boil in a medium saucepan.
Reduce heat and slowly whisk in butter.
Preheat a grill.
Season fillets with salt and grill to desired temperature.
Remove from grill and allow to rest for 4 minutes before serving.
While fillets are resting, place lobster tails and claws in melted butter water and heat until warmed all the way through, about 3 minutes.
Heat remaining 1/4 cup olive oil in a saute pan over medium heat.
Add chopped garlic and blanched baby spinach, saute until heated through.

Final Steps

For each dish, place a potato cake in the center of a plate.
Top with sauteed spinach, and a lobster tail.
Thinly slice the fillet into 6 slices and fan the fillet out in front of the potato and spinach.
Top with the lobster claw and pour sauce around the plate.
Serve spaetzle as a side dish.

Directions

Macaroni

Bring a pot of salted water to a boil over high heat.
Add elbow macaroni and cook for 8 to 9 minutes, until al dente.
Drain macaroni.
Preheat oven to 400° F (205° C).

Cheese Sauce

In a small saucepan heat milk, thyme sprigs and 2 cloves garlic.
Melt butter in a large, deep skillet over medium high heat.
Whisk in flour and cook for 1 minute, stirring constantly.
Strain solids out of the milk and whisk into butter and flour mixture.
Continue to whisk vigorously and cook until mixture is smooth.
Stir in 4 cups of cheese and continue to cook, stirring to melt the cheese.
Season with salt and pepper.

Baking

Add cooked macaroni and parsley, fold together to coat macaroni with cheese sauce.
Scrape into a 3 quart baking dish and sprinkle remaining cheese on top.
Bake for 30 minutes, or until hot and bubbly.

Bacon

Heat a saute pan.
Add bacon, render the fat and cook until crispy.
Add onion, garlic, and thyme leaves.
Cook for about 5 minutes to soften onion.
Season with salt and pepper.

Final Steps

Scatter bacon mixture over macaroni and cheese.
Serve immediately.
