Ingredients

  • 1/2 Large Onion
  • 1 Clove Garlic
  • 1/2 Tablespoon Olive Oil
  • 22oz Beef Broth
  • 7oz Canned Stewed Tomatoes
  • 1/4 Cup Picante Sauce
  • 1/2 Teaspoon Dried Basil
  • 4 1/2oz Cheese-Filled Tortellini
  • 1/2 Green Bell Pepper
  • 1/4 Cup Fresh Parmesan Cheese

Preparation

  • Coarsely Chop Onion
  • Mince Garlic
  • Crush Basil
  • Dice Green Bell Pepper
  • Grate Parmesan Cheese

Directions

  • In a large saucepan cook onion and garlic in olive oil until tender, about 6 minutes.
  • Add broth, tomatoes, picante sauce, and basil, bring to a boil.
  • Stir in tortellini, simmer uncovered for 15 minutes.
  • Stir in green bell pepper, simmer 3 to 4 minutes or until tortellini is tender.
  • Serve immediately, sprinkle with cheese.
