Ingredients
- 1/2 Large Onion
- 1 Clove Garlic
- 1/2 Tablespoon Olive Oil
- 22oz Beef Broth
- 7oz Canned Stewed Tomatoes
- 1/4 Cup Picante Sauce
- 1/2 Teaspoon Dried Basil
- 4 1/2oz Cheese-Filled Tortellini
- 1/2 Green Bell Pepper
- 1/4 Cup Fresh Parmesan Cheese
Preparation
- Coarsely Chop Onion
- Mince Garlic
- Crush Basil
- Dice Green Bell Pepper
- Grate Parmesan Cheese
Directions
- In a large saucepan cook onion and garlic in olive oil until tender, about 6 minutes.
- Add broth, tomatoes, picante sauce, and basil, bring to a boil.
- Stir in tortellini, simmer uncovered for 15 minutes.
- Stir in green bell pepper, simmer 3 to 4 minutes or until tortellini is tender.
- Serve immediately, sprinkle with cheese.
