Ingredients

  • 1 Cup Onion
  • 1 Bell Pepper
  • 2 Cloves Garlic
  • 1 1/2 Cups Brown Rice
  • 3 Cups Vegetable Stock
  • 1 15oz Can Diced Tomatoes
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Oregano
  • 1 Teaspoon Cumin
  • Cayenne Pepper (To Taste)
  • Oil (As Needed)

Preparation

  • Dice Onion
  • Dice Bell Pepper
  • Chop Garlic

Directions

  • Heat oil in a large pan over medium-high heat.
  • Stir fry onion, bell pepper, garlic, and rice until onions are transparent.
  • Add vegetable stock and tomatoes.
  • Bring to a boil and stir in herbs.
  • Reduce heat, cover, and simmer for 40 minutes, or until liquid is gone.
  • Fluff and serve immediately.
