Ingredients
- 1 Cup Onion
- 1 Bell Pepper
- 2 Cloves Garlic
- 1 1/2 Cups Brown Rice
- 3 Cups Vegetable Stock
- 1 15oz Can Diced Tomatoes
- 1 Tablespoon Chili Powder
- 1 Teaspoon Oregano
- 1 Teaspoon Cumin
- Cayenne Pepper (To Taste)
- Oil (As Needed)
Preparation
- Dice Onion
- Dice Bell Pepper
- Chop Garlic
Directions
- Heat oil in a large pan over medium-high heat.
- Stir fry onion, bell pepper, garlic, and rice until onions are transparent.
- Add vegetable stock and tomatoes.
- Bring to a boil and stir in herbs.
- Reduce heat, cover, and simmer for 40 minutes, or until liquid is gone.
- Fluff and serve immediately.
